The Trade Team here at Dairy Australia are very pleased to have you on this this year’s program, and we look forward to introducing you to the Australian dairy industry - with a focus on the food safety and quality assurance systems which underpin our supply chain.
In the following weeks, we will take a detailed look at food safety within the supply chain, along with virtual visits to Australia's key dairy regions to hear about our unique environments in which dairy is produced. This is your chance to speak directly to farmers and export representatives about their on-farm practices and end products produced.

Did you know that 29% of Australia’s milk production is exported? South East Asia is Australia’s second largest export region after China and an important area of growth for the Australian dairy industry. Today we’ll hear a general overview of the industry and see how it fits on the world stage.

Week 2 – 1 March 2022
The entire industry works together to ensure the supply of safe dairy products, with strict record keeping and food safety plans required at each step. Today we’ll hear an overview of the systems in place and see some practical implementation on farm.
The Western Victorian dairy region extends from Geelong towards the South Australian border, with a large proportion of farms concentrated around the southern coastal areas. The area is renowned for its rolling green hills and world-famous tourist attractions such as the Great Ocean Road and the Twelve Apostles.

As the International Market Access Manager, Stewart’s role is to foster a positive regulatory environment across the dairy supply chain. He focuses on food standards and food safety for the purpose of ensuring sustainable market access, and is responsibile for managing Dairy Australia’s role in the Dairy Export Assurance Program (DEAP) which is a three year collaboration project with the Department of Agriculture, Water and the Environment.
DEAP aims to overhaul the export assurance process to streamline the process and reduce regulatory burden. Stewart has qualifications in microbiology, biochemistry and dairy technology as well as an MBA. His career spans more than 30 years in the dairy industry, including roles with regulatory agencies and commercial roles with Australia’s leading dairy manufacturers, developing business globally and with emphasis on the Asian region.

Not everything in food safety is about regulations and auditing! Today we’ll hear about an innovative new program working towards a stronger food safety culture. Sustainability is a hot topic at the moment across all industries. Find out what goals Australia has set and the projects we are working on.
South Australian dairy farms have a long history of quality dairy produce, high productivity, and innovative dairy practices. With farms clustered amongst the Adelaide Hills, Barossa Mid-North, Fleurieu, Lower Murray and Southeast each area features unique climatic conditions.

Dr Andrew Wilson is the General Manager of Compliance, Enforcement and Technical Services at Dairy Food Safety Victoria. Currently, he is responsible for all operational regulatory activities of the agency, which administers licencing and compliance for food safety across the Victorian dairy industry. He is an agricultural scientist and microbiologist who has worked in food safety regulation across two states and multiple commodities over the past 12 years.

Week 4 – 15 March 2022
What kind of inputs are brought onto farm? How do we regulate and record these inputs? We’ll hear from a veterinarian how these systems work. Bring your insights on food safety into the 12.15pm session with short presentations from each of your countries.
The Gippsland dairy region extends west from Melbourne’s metropolitan region, south to Wilsons Promontory and north to the NSW border providing extraordinary diversity of landscapes from lush rolling hills to rugged coastlines, wide sandy beaches to mountainous alpine terrain. There is a large manufacturing sector within the region producing products for both the domestic and export markets.

Every farm in Australia must have a food safety plan. What is included in this plan? What kind of thinking/conversations go into making the plan? We’ll hear directly from a farmer on his food safety plan. Then get ready for a cooking sensation as we interact live with chef Tim Hollonds.
The Western Australia dairy industry located south of Perth is distinguished by its geographic isolation from the eastern seaboard, proximity to neighbouring international markets and focus on large herds managed on pasture-dominated dairying systems.

Australia is a vast continent and sometimes the milk has to travel many kilometres to the factory. How do we keep it safe?
The Murray Dairy region in Northern Victoria offers productive land and resources, a modernised public irrigation network, a diverse services sector, competition for supply between major milk companies and specialised processors within a proximity to Victoria’s capital city Melbourne. The region’s diverse geography and climate is matched by its dairy farmers’ adaptable and resilient farming systems.

Every factory has their own food safety plan and auditing systems. Today we’ll hear from Saputo on how they go about protecting their consumers.
The NSW dairy region generally produces milk for the liquid drinking milk and fresh product market with farmers managing their calving and feeding systems to ensure year-round production in the state.

The Subtropical Dairy region extends 2,200 kilometres from Kempsey, New South Wales to the Atherton Tablelands in Far North Queensland. The region is uniquely characterised by hot and humid summers and mild and dry winters. Average annual rainfalls often exceed 2,000 millimetres in northern parts of the state.

What inspections and certifications are required for Australian companies to export? Today an Australian Government representative will talk us through some of the regulations.
Dairy is the largest land-based agricultural sector in Tasmania. contributing to over $1 billion of the state’s economy each year. There are three main dairy regions in Tasmania, being the north-west, central north and north-east of the state, including King Island. Australia’s first commercial cheese factory was established in Tasmania in the 1820s.
